Before devoting part of your time to reading the following lines it seems only right to make a clarification. Unlike the other versions of the operating system from Microsoft, on Windows 10 there is no special option that allows you to completely block the installation of updates.
However, you do not have to worry: you can still succeed in your intent by taking advantage of some special features attached to the operating system that allow you to cope with the thing while still guaranteeing the installation of any updates but in a much less, so to speak, "aggressive" way.
Currently there are different systems available thanks to which it is possible to obtain a result almost similar to blocking updates.
How to block Windows 10 Home updates
From Windows 10 1903 (May 2019 Update), Windows 10 allows you to block, or rather, temporarily prevent the installation of updates via Windows Update. To take advantage of this possibility, click on the button Home (the flag icon located in the lower left corner of the screen) and click on thegear present on the left side of the menu that opens, in order to access the panel PC settings.
At this point, click on the icon Update and security, then on the button Suspend updates for 7 days and you will suspend Windows 10 updates for 7 days: you can repeat this operation for a total of 5 times, for a total of 35 days of suspension of updates.
Alternatively, you can click on the item Advanced options and select an exact date until which to block Windows Update (always for a maximum of 35 days) using the drop-down menu Select date. In case of second thoughts, to restore the operation of Windows Update, click on the button Resume updates.
How to block Windows 10 Enterprise and Pro updates
The versions Windows 10 Enterprise and Pro offer the same functions to disable automatic updates of Windows 10 Home, but this only from version 1903 of the operating system onwards.
If you are using an older version of Windows 10 and have an Enterprise or Pro edition of the system, you can take advantage of specific settings to temporarily block the installation of updates via. Windows Update

To do this, make sure that there is no check mark on the box next to the item Download updates for other Microsoft products during the Windows update.

As a result, the download of updates will also be postponed. The functionality in question, however, this is good to keep in mind, can be activated only and exclusively if the connection used is of the Wi-Fi type, unfortunately the same is not true for connections made via cable, I'm sorry.
